I applied in-person. The process took 5 days. I interviewed at Chipotle (Woodbury, MN) in Mar 2012
Interview
First you will be interviewed by a kitchen or service manager (or possibly one in training) and if you make a positive impression they will schedule you to come back during a non-peak hour for an hour long crew test. This consists of spending time with the other employees while you discuss the company, it's practices, expectations, etc. as well as getting to know you while you do some basic tasks you would be charged with if you were hired. The crew has final say on whether you will be hired or not - managers consult crew members on their impressions of potential hires, so be friendly, energetic, engaged and take initiative during this process. If all goes well they can get your training week written into the schedule and you in to work within 10 days.

Interview
After I submitted an online application, I got an email with an interview time a week later. I went to the interview and was intitally interviewed by assistant managers. They interviewed about my knowledge of what "all natural and ethical food" means and I was made to discuss the company's "all natural and ethical" message. We made small talk about who I was and what my long term plans were. I was also asked about why I wanted to work for them and if I could physically handle the job. After they discussed it, the GM had a one on one interview with me and we discussed similar things. I am pretty sure they did a background check but there was no drug test.

Got an invitation to come in for an interview. I showed up and there was about 4 or 5 people waiting. Senior manager interviewed us one on one and the GM would be in and out of the interviews. Narrowed it down to a 3 people from all the other groups they interviewed. Called and offered job as well as sent an email.
