Very unorganized, manager didn’t seem to have a clue what was happening in dining area with unhappy guests. Also stated she didn’t know what to ask since she wasn’t the kitchen manager

Easy. Just be honest and talk about your cooking skills. 3 separate interviews as well. Make sure you know your kitchen terminology as well cooking temperatures. Also make sure you know a lot about the certain certifications and laws
